Easy to cook Menudo recipe

My menu for the day is Menudo. Menudo is a pork recipe which is very popular in the Philippines, composed of pork meat chopped in to small cubes. Menudo is one of my favorite easy to cook home recipes.

Even though Menudo is made of pork, you can still make it healthy with a little trick. Since I'm avoiding fatty foods, I usually add more vegetables and only 1/4 kg of pork in my recipe. Vegetables like carrots, bell pepper and potatoes make this recipe a healthy meal for my family. However, I still want to share the basic ingredients in a typical Menudo, you decide if you want to adjust with the amount of pork and vegetables to achieve your preferred healthy meal.


  • 1 kg. pork cut in to small cubes
  • 1/4 chopped pork liver
  • 2 pcs. garlic minced
  • 150 grams liver spread
  • 1 big onion chopped
  • 1 small red pepper stripped
  • 2 sliced tomatoes
  • 1 tbsp. of raisins
  • 1 pineapple can tid-bits
  • 2 whole potatoes chopped
  • 1 carrot cubed
  • 2 tbsp. tomato paste
  • 1 tbsp.garbanzos
  • 1 tbsp.olive oil
  • 1 tbsp.soysauce
  • 1 cup water

For the marinade:
  • 5 tbsp. soy sauce 
  • 1/2 cup catsup
  • 1 small can of pine apple juice (pine apple junk juice is also good)
  • 1 tsp. black pepper
  • msg.  small amount.(optional)


  • Marinate pork and liver overnight.Refrigerate. Unfroze before cooking.
  • On a deep pan, saute garlic, onion and tomato
  • Add the marinated pork and liver
  • Add tomato paste and stir to avoid sticking from the pan
  • Bring to boil, lower down the heat. 
  • Check and stir every once in a while to distribute the ingredients well. 
  • Add water and cover
  • When the pork gets tender, add carrots, bell pepper,garbanzos, raisins and potatoes. It is best to not over cook the veggies to retain its nutrients.
  • Now add liver spread and stir, keep in low heat
  • Remove from heat after 10 minutes.
  • adjust seasoning if necessary
Menudo is best served with rice.
